Mackerel Salad: Low carb high protein lunch

Are you getting your essential fats? The best way to get them is to eat more oily fish and mackerel is great with salad. I by pre-cooked mackerel from ALDI, it’s convenient for work and not at all smelly!

Put a vibrant salad together and add some mackerel for a low carb high protein lunch. It will fill you up without making you feel sluggish after.

  • Mackerel
  • Salad leaves
  • Beetroot
  • Mozzarella
  • Cucumber
  • Tomatoes
  • Pine nuts

Delicious.

 

Two Minute Breakfast Berries and Yogurt

Sometimes just a simple breakfast to satisfy a sweet craving is needed in the morning. Iprefer not to have cereal as it’s just a high carbohydrate meal that will leave you feeling hungry again in no time at all. But, a good low sugar granola with Greek yogurt (full fat) and berries will not only satisfy you, it will provide you with everything you need to start your day.

Protein, fibre and fat are important for breakfast as evidence has shown this combination will leave you feeling fuller for longer and stabilise blood sugar levels which means your body will use fat storage for energy.

I use frozen berries because they are cheaper and they last longer, just take what you need.

  • Heat a frying pan on a low heat and add your berries, they only need 1 or 2 minutes to warm them through
  • Greek yogurt
  • Low sugar granola (Lizie’s low sugar granola)
  • Add those delicious warm berries to the granola and yogurt

Raw Protein Bites

These tasty little snacks are perfect pre or post gym or just to replace your usual chocolate fix.

I have used Purition 100% wholefood protein mix as the main protein ingredient. http://www.purition.co.uk

Recipe

20/30g Lucy bee Coconut Oil

2 scoops of Purition Breakfast Smoothie (or brown rice protein)

50g pre-soaked dates

2 tsp of Whole Earth Peanut Butter

1 tsp of maple syrup or honey

2 tsp of good quality dark chocolate chips or cocoa nibs

Shredded coconut to coat

Combine all ingredients in a blender, if the mixture is to sticky to roll into balls add a little more Purition or alternative protein. Then roll into balls and roll over the coconut to coat. They will keep in the fridge for about two weeks or freeze for three months.

I love a good breakfast and these pancakes hit the spot. I use a whole food product called PURITION which is 100% natural and can be used as a shake, added to yogurt or used as an ingredient like I have here. Take a look at their website www.purition.co.uk.

Recipe

2 scoops of Purition

1 whole egg

1 egg white

2 tsp of oats

splash of almond milk

frozen raspberries, Greek yogurt and a little maple syrup to finish

Mix all ingredients together in a bowl and pour half into a small frying pan (recipe will make two pancakes). When pancakes are done turn out on to a plate turn off heat and use residual heat to warm raspberries through, add to Greek yogurt and dollop on top of your delicious pancakes…yum.

Super Breakfast Smoothie

Delicious healthy smoothie to start your day.
1/2 a banana
2.Tbsp of natural yogurt
100ml milk of your choice
Small handfull of blueberries
1 small Apple
1.tsp of Golden linseed
1 tsp of sesame seeds
1.tsp of cocao nibs

Blend, drink….enjoy
